Downgrade to Standard SQL from Enterprise

We have recently learned that many of our servers were set up with the Enterprise version of SQL as opposed to the Standard edition. We are now being audited and need to downgrade the version of SQL installed on a server that is home to a lot of Sharepoint WSS 3.0 Databases.

Is this possible and if so what would the best plan of action be?
